Service Description

This tasting class is designed for coffee professionals and enthusiasts who already have some brews, roasts, and tastes under their belt. We will take up a notch here with some intensive activities that will challenge your sensory skill and help you detect the finest differences. This is a full day event, The objective of this workshop is to strengthen your skills, build confidence, and a sense of criticism, and become a better coffee professional. Attending the Advanced and Specialty Coffee Tasting workshop previously will help greatly. Activity 1 - BASIC TASTE INTENSITIES Rank from the least to the most intense of the 5 basic taste solutions. Activity 2 - IDENTIFY BASIC TASTE MIX Taste a mixture of basic taste solutions and identify which ones are part of the mix. Activity 3 - SMELL FLORAL AND SPICES Florals and spices are one of the hardest notes to find in coffee. Train and categorize the different florals and spices. Activity 4 - SMELL & COOK We will use different ingredients to illustrate the differences between bitterness, sweetness, and sourness of the same ingredient before cooking some sugars and experiencing the rate of Maillard reaction and caramelization where we will discuss further the importance and modulation of sweetness, texture, and aftertaste ----BREAK---- lunch included Activity 5 - TASTE THE ROAST PROFILE Cupping of the same coffee roasted differently modulating time and temperature: Short-High, Short-Low, Standard, Long-High, Long-Low. Activity 6 - DISCUSSION ON BALANCE, ACIDITY, SWEETNESS, BITTERNESS, AND FINISH Activity 7 - TASTE THE WATER Cupping with different water, using the same coffee to identify and discuss the importance of minerals in coffee. Here we will fix the alkalinity and play with Calcium and Magnesium ions to taste their impact on the cup. ----BREAK---- Activity 8 - TRIANGULATION The final test, identify the odd cup in a triangle. This exercise will recoup all the activities we covered through a 4 triangle test. You'll also learn some techniques I have developed over the last 5 years of competition. ---Q&A--- Finally, you'll get back home with: - a free bag of coffee - the Memli Water kit - a cupping spoon - some goodies

Cancellation Policy

We understand that sometimes things come up and you may need to cancel your attendance at one of our coffee workshops. In order to be fair to our other attendees and our instructors, we have the following cancellation policy in place: Cancellations made at least 7 days prior to the workshop date will receive a full refund. Cancellations made between 3-6 days prior to the workshop date will receive a 50% refund. Cancellations made less than 3 days prior to the workshop date will not receive a refund. If you need to cancel your attendance, please contact us as soon as possible so that we can make the necessary arrangements. Please note that we reserve the right to cancel or reschedule a workshop due to unforeseen circumstances, such as inclement weather or low attendance. In such cases, we will offer a full refund or the option to reschedule to a future workshop.
